Is it possible to programmatically fill in values in a select (drop-down) on a connector wizard page or to create a custom widget which provides such values by itself. The values I want to show in the connector wizard page are provided by a Java dependency.

No, studio connector wizard are not extensible above the static connector definition model provided.
